Simon's feature film directorial debut was in 2012 with the financial thriller, Supercapitalist, filmed in New York, Hong Kong, and Macau, starring Linus Roache, Kenneth Tsang, and Richard Ng. Recently, Simon has been heavily involved directing television for AXN, Discovery Channel, FOX, FOX Sports, NBC/Universal, and DIVA, including the award winning series, Freedom Riders Asia with Charley Boorman, Cyril Takayama's Rio Magic and award winning Asia's Got Talent, the biggest talent show in the world.

Simon and team Mustard also co-created and produced the original broadcast program, The History Hustle, which also premiered online and garnered over 1m views in less than a week.Turn the camera around and Simon's chubbiness is what sets him apart from the rest.

Simon started as a TV host on Turner Networks in Atlanta, then as an MTV VJ in New York. Simon, himself, was also nominated and won the award for Best Entertainment Host/Presenter. Simon also headlines, The History Hustle.On the big screen Simon has portrayed multiple characters from the sly and cunning eunuch on Roger Corman's, Hell's Haunted Palace, to the child molesting Thai Thug in the French auctioneer, Borderland.

Simon also kicks ass in Universal's kung fu action film, Man with the Iron Fists 2 (dir: Roel Reine), playing the dim witted, yet lovable Cha Pow...a fool for love with a heart of gold. Simon's latest project, Birth of the Dragon (dir: George Nolfi) will world premiere at TIFF 2016, where Simon plays Vinnie Wei, not only one of Bruce Lee's finest (in his mind) students but also a proud mama's boy.
